- 2 cloves garlic, minced
- 32 oz chicken broth
- 1 (27 oz) can seasoned mixed greens (collard greens or turnip greens)
- 1 (15 oz) can seasoned butter beans, drained and rinsed
- 1 (14.5 oz) can Hoppin’ John (or black-eyed peas), drained and rinsed
- 1 (15 oz) can corn kernels, drained
- 1 (15 oz) can diced tomatoes with green chilies
- ½ tbsp Cajun seasoning (adjust to taste)
- ½ tsp smoked paprika
- Salt & black pepper to taste
Optional Garnishes & Serving Suggestions:
- Fresh parsley or green onions, chopped
- Hot sauce for extra heat
- Lemon wedges for brightness
- Cornbread or crusty bread for dipping
Instructions
- Sauté the sausage: Heat a large pot over medium heat and melt the butter. Add the sliced sausage and cook until browned, about 5 minutes. Remove and set aside.
- Cook the aromatics: In the same pot, add the onion, celery, and garlic. Sauté for 3-4 minutes until softened and fragrant.
- Combine the ingredients: Return the sausage to the pot. Stir in the chicken broth, greens, butter beans, Hoppin’ John, corn, diced tomatoes, Cajun seasoning, smoked paprika, salt, and black pepper.
- Simmer: Bring the soup to a boil, then reduce heat and let it simmer for 20-25 minutes, stirring occasionally.
- Taste & adjust: Adjust seasonings as needed. For extra thickness, mash some of the beans or blend a portion of the soup.
- Serve hot: Ladle the soup into bowls and garnish with fresh parsley or green onions. Serve with cornbread or crusty bread.
Notes
- Vegetarian Option: Replace sausage with plant-based sausage or mushrooms and use vegetable broth.
- Make It Spicier: Add extra Cajun seasoning, red pepper flakes, or hot sauce.
- Storage Tips: Refrigerate leftovers in an airtight container for up to 3 days. Freeze for up to 3 months and reheat on the stovetop.
- Thickening Trick: Blend a portion of the soup or mash some beans to make it creamier.
