  • ½ lime, juiced

Instructions

Step 1: Prep the Ingredients

  1. Cook the rice ahead of time and chill it in the fridge for at least 4 hours (preferably overnight) to prevent mushiness.
  2. Dice the pineapple, bell pepper, and green onions. Mince the garlic and ginger.
  3. In a small bowl, mix soy sauce, fish sauce, curry powder, and red chili flakes.

Step 2: Cook the Shrimp

  1. Heat 1 tbsp oil in a large skillet or wok over medium-high heat.
  2. Add the shrimp and cook for 2-3 minutes per side, until pink and opaque. Remove from the pan and set aside.

Step 3: Stir-Fry the Veggies & Eggs

  1. In the same pan, add 1 tbsp oil, garlic, and ginger. Sauté for 30 seconds until fragrant.
