Ingredients

For the Casserole:

  • 1 lb ground beef (or ground turkey/chicken for a leaner option)
  • 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
  • 1/2 cup water
  • 1 cup salsa (mild, medium, or hot based on preference)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 2 cups crushed tortilla chips (Doritos, Fritos, or plain tortilla chips)
  • 1 1/2 cups shredded cheddar cheese (or a Mexican cheese blend)

For Toppings:

  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup diced red onions
  • 1/2 cup sour cream or Greek yogurt
  • 1 avocado, diced
  • Fresh cilantro, chopped (optional)
  • Sliced jalapeños (optional for spice)

Instructions

Step 1: Preheat the Oven

Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with cooking spray.

Step 2: Cook the Beef

  1. In a large skillet over medium heat, cook the ground beef until browned (about 5-7 minutes).
  2. Drain excess grease, then stir in the taco seasoning and water. Simmer for 2-3 minutes until thickened.

Step 3: Add the Filling Ingredients

  1. Stir in the salsa, black beans, and corn, mixing everything well.

Step 4: Assemble the Casserole

  1. Spread half of the crushed tortilla chips on the bottom of the greased baking dish.
