  • 1/2 cup (150g) mashed bananas (ripe)
  • 1 tablespoon (15ml) honey
  • 1/2 teaspoon vanilla extract (optional)
  • A pinch of salt (optional)
  • Optional Mix-ins (up to 1/4 cup total):
    • Chocolate chips
    • Chopped nuts (walnuts, pecans, almonds)
    • Cinnamon or nutmeg for extra flavor

Instructions

  • Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper.
  • In a mixing bowl, combine oats, mashed bananas, and honey. Stir until fully mixed.
  • Add vanilla extract, salt, and any mix-ins (chocolate chips, nuts, spices). Gently fold them in.
  • Drop tablespoon-sized portions of dough onto the prepared baking sheet. Shape them slightly since they won’t spread much.
  • Bake for 13-16 minutes, or until golden brown.
  • Let cookies cool for 15 minutes on the baking sheet before serving.
