Ingredients

  • 8 oz pasta (spaghetti, fettuccine, or penne)
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup parmesan cheese, grated (fresh is best!)
  • 2 tbsp butter
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain, reserving ½ cup of pasta water, and set aside.

  • Cook the Chicken: In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper, then cook for 6-8 minutes until golden and cooked through. Remove from skillet and set aside.

  • Make the Sauce: In the same skillet, melt butter over medium heat. Add garlic and sauté for 1-2 minutes until fragrant. Stir in heavy cream and bring to a simmer. Gradually whisk in parmesan cheese until the sauce thickens, about 2-3 minutes. If too thick, add a splash of reserved pasta water.

  • Combine: Return the cooked chicken to the skillet, then add pasta. Toss everything together until well coated in the creamy sauce.

  • Serve: Garnish with fresh parsley and extra parmesan cheese. Serve hot and enjoy!
