Ingredients

For the Churro Crust:

  • 2 cans (8 oz each) refrigerated crescent roll dough
  • ½ cup granulated sugar
  • 1 tablespoon ground cinnamon
  • ¼ cup melted butter

For the Cheesecake Filling:

  • 2 (8 oz) packages cream cheese, softened
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg

For the Cinnamon-Sugar Topping:

  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.

  • Prepare the Cinnamon-Sugar Mix: In a small bowl, combine ½ cup sugar and 1 tablespoon cinnamon. Set aside.

  • Create the Churro Crust:

    • Unroll one can of crescent roll dough and press it into the bottom of the prepared baking dish.
    • Sprinkle half of the cinnamon-sugar mixture evenly over the dough.
  • Make the Cheesecake Filling:

    • In a large mixing bowl, beat together the cream cheese, ½ cup sugar, vanilla extract, and egg until smooth.
    • Spread this mixture evenly over the bottom crust.
  • Top with Second Layer of Dough:

    • Unroll the second can of crescent roll dough and carefully lay it over the cheesecake filling.
    • Brush the top with melted butter and sprinkle the remaining cinnamon-sugar mixture on top.
  • Bake: Bake for 30-35 minutes, or until the top is golden brown and the cheesecake is set.

  • Cool & Chill:

    • Allow the cheesecake to cool at room temperature for about 30 minutes.
    • Then, refrigerate for at least 2 hours to firm up before slicing.
  • Serve & Enjoy: Cut into squares and serve chilled or at room temperature. For an extra indulgence, drizzle with caramel or chocolate sauce!

Notes

  • Make it Extra Indulgent: Add a drizzle of caramel or melted chocolate before serving.
  • Want More Crunch? Lightly toast the bottom crust before adding the cheesecake filling.
  • Spice it Up: Add a pinch of cayenne to the cinnamon-sugar mix for a mild heat kick.
  • Storage Tips: Store leftovers in the refrigerator for up to 4 days in an airtight container.
