  • 2 cloves garlic, minced
  • ½ cup carrots, shredded
  • ½ cup celery, diced
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • 1 package (16 oz) potato gnocchi
  • 1½ cups heavy cream (or half-and-half)
  • 1 cup fresh spinach, chopped
  • ½ cup Parmesan cheese, grated

Optional Garnishes:

  • Extra Parmesan cheese
  • Fresh basil or parsley
  • Crushed red pepper flakes

Instructions

Step 1: Cook the Chicken

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chicken breast and season with salt, pepper, paprika, and Italian seasoning.
  3. Cook for 4-5 minutes per side, until browned. Remove and set aside to shred later.

Step 2: Sauté the Aromatics

  1. In the same pot, melt butter and add onions, garlic, carrots, and celery.
  2. Cook for 3-4 minutes until softened and fragrant.

Step 3: Simmer the Soup

  1. Pour in chicken broth and bring to a gentle simmer.
  2. Shred the cooked chicken and return it to the pot.
  3. Let the soup simmer for 10 minutes to develop flavors.

Step 4: Add Gnocchi and Cream

  1. Add potato gnocchi and cook for 2-3 minutes, or until they float.
  2. Reduce heat to low and stir in heavy cream and Parmesan cheese.
  3. Finally, add chopped spinach and cook for 2 minutes until wilted.

Step 5: Serve & Enjoy!

  1. Taste and adjust seasoning as needed.
  2. Ladle into bowls and top with extra Parmesan, fresh basil, or red pepper flakes.
  3. Serve hot with crusty bread or a fresh side salad.

Notes

  • Make it Lighter: Use half-and-half instead of heavy cream, or swap gnocchi for cauliflower gnocchi.
  • Spice It Up: Add a pinch of red pepper flakes or a splash of hot sauce.
  • Make It Gluten-Free: Use gluten-free gnocchi or substitute with small pasta.
  • Storage Tips: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stove with a splash of broth or milk.
