Ingredients

For the Pasta:

  • 4 cups water (for boiling)
  • 1 teaspoon salt

For the Chicken and Shrimp:

  • 2 boneless, skinless chicken breasts (diced into bite-sized pieces)
  • 1 lb medium shrimp (peeled & deveined)
  • 1 tablespoon olive oil
  • Salt and black pepper (to taste)

For the Carbonara Sauce:

  • 2 large eggs
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic (minced)
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional, for heat)

For Garnish:

  • ¼ cup chopped fresh parsley
  • Extra Parmesan cheese

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil and cook the fettuccine according to package instructions (8-10 minutes).
  2. Reserve 1 cup of pasta water, then drain and set the pasta aside.

Step 2: Cook the Chicken and Shrimp

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season the chicken with salt and black pepper, then cook until golden brown and fully cooked (4-5 minutes per side). Remove and set aside.
  3. In the same skillet, add the shrimp, season lightly, and cook for 2-3 minutes per side until pink and opaque. Remove and set aside with the chicken.

Step 3: Prepare the Carbonara Sauce

  1. In a bowl, whisk together eggs, heavy cream, Parmesan cheese, and black pepper.
  2. Lower the heat to medium, then add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant.

Step 4: Combine Everything

  1. Add the cooked pasta to the skillet and toss it with the garlic.
  2. Remove from heat, then slowly pour in the egg mixture, stirring continuously to prevent scrambling.
  3. Add a bit of reserved pasta water to thin the sauce if needed.
  4. Return the chicken and shrimp to the pan, tossing everything together.

Step 5: Serve and Garnish

  1. Plate the pasta and top with fresh parsley and extra Parmesan cheese.
